Something good is always cooking at Earth School!  

Our collection of cookbooks include recipes lovingly prepared by teachers and students at Hilltop Hanover Farm. Our weekly "funshops" always include cooking - as part of our "lump-learning" themes and our ongoing practice of sustainability.  We use local, seasonal, organic ingredients and love taking fresh food straight from our farm to the table!

Featured "Fan Favorite" Recipe: Roasted Tomatillo Salsa
 
1 ½ pounds fresh tomatillos
1 fresh chile pepper
3 garlic cloves
½ cup fresh cilantro
1 onion
2 tablespoons coarse salt
 
Preheat broiler.
 
Remove the tomatillo husks and rinse under warm water to remove stickiness.  Coarsely chop tomatillos, garlic, chile pepper, onion on a rack of a broiler pan 1 to 2 inches from heat, turning once, until tomatillos are softened and slightly charred (about 7 minutes).
 
Puree all ingredients (including chopped cilantro and salt) in a blender.
 
Yield: makes about 3 cups
Total Time: about 15 minutes
